¼ cup butter
¼ cup whole grain flour
2 cups of milk
1 potato, peeled and diced
1 onion, diced
2 carrots, diced
2 celery stalks, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 cup broccoli florets, cut very small
½ cup frozen green beans
½ cup peas
½ cup corn
2 cups vegetable or chicken stock
1 tsp. dried thyme
Salt and pepper to taste
Combine butter and flour in a pot to make a paste. Add milk.
Add vegetables, stock, and herbs. Add more stock if needed.
Simmer until vegetables are tender.
