This one is actually my husband's recipe
2 cups cooked brown rice (better if pre-cooked and chilled)
2 tbsp. olive oil
4 green onions, finely sliced
¾ cup frozen peas
½ cup frozen corn
2 whole eggs
Soy sauce to taste (approx. 4 tbsp)
Heat oil in wok on high heat
Add eggs and scramble.
Add rice. Toss to combine with eggs.
Add remaining ingredients, including soy sauce. Toss and cook for an additional 3-5 minutes. Serve and enjoy!
