Marinara Sauce

2 tsp. olive oil
1 onion
2 stalks celery
2 carrots
3 cloves garlic
2 28oz cans crushed tomatoes
1 tsp oregano
¼ tsp. salt (or more if desired)

Dice up onions, celery and carrots into small pieces. Saute in olive oil until soft. Add garlic, saute one more minute.

Add tomatoes, oregano and salt. Simmer for 30 minutes. Add hot chili flakes if desired.

Freezes very well.
